Why choose it? 1) Site-driven character -> Gimblett Gravels' stony, free-draining soils give mineral clarity and terroir focus. 2) Thoughtful co-fermentation -> A small addition of Grüner Veltliner skins and 60% whole-bunch fermentation add white-pepper lift and tensile tannin structure. 3) Balanced maturity -> 14 months in new and seasoned French oak creates spice and polish without hiding the fruit.

Sommelier's Notes: Hand-picked, co-fermented and hand-plunged, this 2020 shows stone, dry-clay and savoury herb aromatics up front; black cherry and spiced plum skin fill the mid-palate while finer tannins and bright acidity hold the frame. Expect white-pepper lift from the Grüner, clove and Hunan spice accents from oak and élevage, and a crunchy, somewhat terse finish that rewards short-term cellaring.

Blank Canvas Wines is a small, hands-on producer run by Dominic and Rachelle Smith operating the smallest vineyard block in the Gimblett Gravels district. The team favours low-intervention viticulture—no herbicides or systemic controls—and traditional winemaking techniques: hand-harvest, whole-bunch inclusion and natural ferments, followed by careful French oak ageing.
